Ingredients

The salad

  • 1 lb ground chicken
  • ¼ cup fresh lime juice
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 cup fresh herbs (mint, cilantro)
  • 1 cup shallots, thinly sliced
  • 1 tbsp chilies, chopped
  • 1 head butter lettuce

Optional ingredients

  • ¼ cup toasted rice

Instructions

  1. 1. Cook the ground chicken in water or stock until fully cooked through.
  2. 2. Drain the chicken and let it cool slightly.
  3. 3. In a bowl, mix lime juice, fish sauce, and sugar to create the dressing.
  4. 4. Toss the cooked chicken with the dressing, fresh herbs, shallots, and chilies.
  5. 5. Serve the mixture in lettuce leaves, optionally adding toasted rice.
