Favorite Beet Salad with Apple Cider Dressing

Ingredients

The salad

  • 2 pounds beets
  • 6 ounces mixed greens
  • ½ cup chopped red onion
  • ½ cup chopped pecans (optional)
  • 2 ounces soft goat cheese (chevre)

The dressing

  • ¼ cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1 heaping tablespoon honey
  • salt to taste
  • pepper to taste

Instructions

  1. Peel the beets if desired and cut them into 1-inch chunks.
  2. Fill a saucepan with an inch of water and place a steam basket over it.
  3. Bring the water to a boil, then add the chopped beets to the steam basket.
  4. Cover the pan and steam the beets for about 15 to 20 minutes until tender.
  5. While the beets are cooking, prepare the dressing by combining olive oil, vinegar, mustard, honey, salt, and pepper in a mason jar.
  6. Shake the jar vigorously until the dressing is smooth and uniform.
  7. Once the beets are cooked, let them cool slightly.
  8. To serve, start with a bed of mixed greens, then add the beets, chopped red onion, crumbled goat cheese, and pecans if using.
  9. Drizzle the dressing over the salad and toss to coat well.
