Favorite Beet Salad with Apple Cider Dressing

The dressing

Instructions
- Peel the beets if desired and cut them into 1-inch chunks.
- Fill a saucepan with an inch of water and place a steam basket over it.
- Bring the water to a boil, then add the chopped beets to the steam basket.
- Cover the pan and steam the beets for about 15 to 20 minutes until tender.
- While the beets are cooking, prepare the dressing by combining olive oil, vinegar, mustard, honey, salt, and pepper in a mason jar.
- Shake the jar vigorously until the dressing is smooth and uniform.
- Once the beets are cooked, let them cool slightly.
- To serve, start with a bed of mixed greens, then add the beets, chopped red onion, crumbled goat cheese, and pecans if using.
- Drizzle the dressing over the salad and toss to coat well.
