Easy Shepherd's Pie With Ground Beef

Ingredients

Potato Topping

  • 1 large russet potato
  • 2 tablespoons butter
  • 1 tablespoon milk or cream
  • 1 large egg yolk
  • to taste salt and pepper

Ground Beef Filling

  • ½ pound ground beef
  • 1 teaspoon olive oil
  • ½ medium onion
  • 1 medium carrot
  • 1 clove garlic
  • teaspoon dried thyme
  • 1 tablespoon all-purpose flour
  • 2 teaspoons ketchup or tomato paste
  • ¾ cup chicken broth
  • ½ teaspoon Worcestershire sauce
  • ¼ cup frozen peas

Instructions

  1. Preheat the oven to 400°F and grease a 7x5-inch baking dish.
  2. Cook chopped potatoes in a pot of salted water until fork-tender, then drain and set aside.
  3. In a skillet, brown the ground beef, then remove and drain the fat.
  4. In the same skillet, cook onions and carrots until softened, then add garlic and thyme.
  5. Stir in flour and ketchup or tomato paste, then gradually whisk in chicken broth and Worcestershire sauce, simmering until thickened.
  6. Combine the beef and peas with the sauce mixture, then transfer to the baking dish.
  7. Mash the potatoes with butter, milk or cream, and egg yolk, seasoning with salt and pepper.
  8. Spread the mashed potatoes over the beef mixture and bake for 20 to 25 minutes until golden brown.
  9. Allow to cool for 10 to 15 minutes before serving.
