Ingredients

The filling

  • 1 pound grass-fed ground beef
  • 1 onion chopped
  • 4 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen petite green peas
  • 2 tablespoons tomato paste
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon ground dried thyme

The topping

  • 8 medium sweet potatoes
  • 2 tablespoons butter or ghee
  • ¼ cup unsweetened almond milk or plant milk

Instructions

  1. Cook the sweet potatoes until soft, then remove the skins and mash them with butter and almond milk.
  2. Preheat the oven to 350°F.
  3. In a skillet, cook the onion, celery, garlic, ground beef, and tomato paste until the beef is browned.
  4. Stir in the peas, salt, pepper, and thyme, then transfer the mixture to a baking dish.
  5. Spread the mashed sweet potatoes over the beef and vegetable mixture.
  6. Bake for 20 minutes until the topping is browned.
  7. Let cool for a few minutes before serving.
