Ingredients

The main ingredients

  • 4 tablespoon coconut, peanut or avocado oil
  • 2 cloves garlic
  • 8-10 ounces chicken breast
  • cup onions
  • 1 cup fresh pineapple
  • cup red bell peppers
  • cup carrots
  • ½ cup green onions
  • 2 cups cooked Jasmine rice
  • 2 eggs lightly whisked
  • cup cashews

The stir fry sauce

  • teaspoons yellow curry powder
  • tablespoon sugar
  • ½ teaspoon ground black or white pepper
  • 1 tablespoon fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice or rice vinegar

For garnish

  • to taste lime wedges
  • to taste cilantro
  • to taste Sriracha

Instructions

  1. Make the sauce by mixing curry powder, sugar, pepper, lime juice, fish sauce, and soy sauce.
  2. Heat a skillet over medium-high heat and add oil. Once hot, add garlic and fry until fragrant.
  3. Add the chicken and cook until lightly browned, then set aside.
  4. Wipe out the pan, add more oil, and stir fry the onion for 2 minutes. Then add the pineapple and cook for a few minutes.
  5. Add the vegetables and green onions, cooking until tender, then set aside with the chicken.
  6. Add more oil, stir fry the rice, and create a well in the center to scramble the eggs.
  7. Return the chicken and vegetables to the pan, then add the sauce and cook for 1-2 more minutes.
  8. Stir in the cashews and cilantro, then adjust seasoning as needed.
  9. Serve warm with lime wedges and optional Sriracha.
