Instructions
- Make the sauce by mixing curry powder, sugar, pepper, lime juice, fish sauce, and soy sauce.
- Heat a skillet over medium-high heat and add oil. Once hot, add garlic and fry until fragrant.
- Add the chicken and cook until lightly browned, then set aside.
- Wipe out the pan, add more oil, and stir fry the onion for 2 minutes. Then add the pineapple and cook for a few minutes.
- Add the vegetables and green onions, cooking until tender, then set aside with the chicken.
- Add more oil, stir fry the rice, and create a well in the center to scramble the eggs.
- Return the chicken and vegetables to the pan, then add the sauce and cook for 1-2 more minutes.
- Stir in the cashews and cilantro, then adjust seasoning as needed.
- Serve warm with lime wedges and optional Sriracha.
