Ingredients

The base

  • 3 cups cooked rice
  • 2 cups cubed pineapple

The aromatics

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ tablespoon grated ginger
  • teaspoon salt
  • ½ teaspoon chili flakes

The vegetables

  • ½ red bell pepper diced
  • ½ cup frozen peas

The sauce

  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce

The garnish

  • ½ cup roasted cashews
  • cup chopped green onion

The cooking oil

  • 2 tablespoons cooking oil

Instructions

  1. Heat the oil in a wok or large nonstick skillet over medium heat.
  2. Add the onion, garlic, ginger, salt, and chili flakes, cooking until the onion softens.
  3. Stir in the red bell pepper and peas, cooking for an additional minute.
  4. Add the pineapple and cook until it is lightly caramelized.
  5. Stir in the rice, sesame oil, and soy sauce, cooking for 2 minutes.
  6. Taste and adjust the soy sauce if needed, then add the roasted cashews and mix well.
  7. Serve immediately, garnished with chopped green onion.
