Pineapple Fried Rice

Ingredients

The rice

  • 3 bags Success® Jasmine Rice
  • 3 cups cooked rice (leftover is fine)

The protein

  • ¾ pound boneless skinless chicken breast (cut into bite-size pieces)
  • cup cooked and crumbled bacon

The vegetables

  • 1 tablespoon vegetable oil (divided use)
  • ½ cup finely chopped onion
  • ½ cup chopped carrots
  • ½ cup chopped red bell pepper
  • ½ cup frozen peas

The fruit

  • 1 cup diced pineapple (fresh or canned)

The seasonings

  • 3 tablespoons soy sauce (or more to taste)
  • 1 tablespoon toasted sesame oil
  • to taste salt and pepper
  • optional sliced green onions (for garnish)

Instructions

  1. Cook the rice according to package directions.
  2. In a large skillet, heat 2 teaspoons of vegetable oil over medium-high heat and sauté the chicken until browned and cooked through.
  3. Remove the chicken from the pan and keep warm.
  4. Wipe out the pan and heat the remaining oil, then add the onion and carrot and cook until softened.
  5. Stir in the red bell pepper, pineapple, and bacon, and cook for a few minutes.
  6. Add the rice, reserved chicken, and frozen peas to the pan, then stir in the soy sauce and sesame oil.
  7. Mix everything gently until combined, and season to taste with salt and pepper.
  8. Serve immediately, garnished with sliced green onions if desired.
