Pineapple Fried Rice

Instructions
- Cook the rice according to package directions.
- In a large skillet, heat 2 teaspoons of vegetable oil over medium-high heat and sauté the chicken until browned and cooked through.
- Remove the chicken from the pan and keep warm.
- Wipe out the pan and heat the remaining oil, then add the onion and carrot and cook until softened.
- Stir in the red bell pepper, pineapple, and bacon, and cook for a few minutes.
- Add the rice, reserved chicken, and frozen peas to the pan, then stir in the soy sauce and sesame oil.
- Mix everything gently until combined, and season to taste with salt and pepper.
- Serve immediately, garnished with sliced green onions if desired.
