Favorite Cabbage Soup

Ingredients

Vegetables

  • 12 cups shredded cabbage
  • 2 to 3 cups finely diced onions
  • 2 cups finely diced carrots
  • 2 to 3 cups finely diced potatoes

Liquids and Fats

  • ¼ cup olive oil
  • 10 cups homemade vegetable stock or water
  • 1 cup heavy cream
  • ¼ cup white balsamic vinegar

Seasonings

  • ½ cup flour
  • 2 teaspoons kosher salt
  • 2 teaspoons whole caraway seeds, crushed or pulverized
  • 1 teaspoon sugar
  • freshly ground black pepper to taste
  • ¼ cup finely chopped fresh dill

Instructions

  1. Soak the cabbage in boiling water for one minute, then drain.
  2. Heat olive oil in a large pot and sauté the onions until soft.
  3. Add flour to the onions and stir, then gradually add the vegetable stock or water while whisking.
  4. Once simmering, add the cabbage, carrots, potatoes, salt, pepper, caraway seeds, vinegar, and sugar.
  5. Simmer the soup for about 30 minutes, stirring occasionally.
  6. Stir in the cream and simmer for an additional five minutes.
  7. Add chopped dill, taste, and adjust seasoning if necessary before serving.
