Sausage And Kale Soup

Ingredients

  • 1 tbsp Avocado oil
  • 1 lb Ground Italian sausage
  • 1 medium Onion (diced; ~1 cup)
  • ½ cup Carrots (diced)
  • 4 cloves Garlic (minced)
  • 6 cups Chicken bone broth (or regular chicken broth)
  • 5.5 oz Curly kale (chopped, stems removed; ~1 bunch)
  • 4 oz Cream cheese (at room temperature; omit for dairy-free)

Instructions

  1. Heat the oil in a large Dutch oven over medium-high heat and brown the sausage.
  2. Remove the sausage and sauté the onions and carrots in the remaining oil until the onions start to brown.
  3. Add minced garlic and sauté until fragrant.
  4. Deglaze the pan with chicken broth, scraping up any browned bits, and bring to a boil.
  5. Add chopped kale and return the sausage to the pot, then simmer.
  6. Blend 2 cups of the hot broth with cream cheese until smooth, then stir back into the soup.
