Instructions
- Heat the oil in a large Dutch oven over medium-high heat and brown the sausage.
- Remove the sausage and sauté the onions and carrots in the remaining oil until the onions start to brown.
- Add minced garlic and sauté until fragrant.
- Deglaze the pan with chicken broth, scraping up any browned bits, and bring to a boil.
- Add chopped kale and return the sausage to the pot, then simmer.
- Blend 2 cups of the hot broth with cream cheese until smooth, then stir back into the soup.
