Citrus Summer Sangria

Ingredients

  • 2 cups fresh or frozen pineapple, cut into cubes
  • 1 unit orange, sliced
  • 2 unit limes, sliced
  • 2 ½ cups fresh pineapple juice
  • 1 (750 ml) bottle white wine
  • ½ cup coconut rum
  • 2 cups lime flavored soda water
  • 1 handful fresh mint, torn

Instructions

  1. Chop the pineapple and slice the oranges and limes.
  2. Combine the chopped fruit in a large pitcher and add the white wine, pineapple juice, coconut rum, and soda water.
  3. Stir the mixture well and place the pitcher in the fridge to marinate for at least 1 hour, preferably 4 to 6 hours.
  4. Before serving, stir in the torn mint leaves, serve over ice, and enjoy!
