Ingredients

The lentils

  • 1 lb red lentils

The flavorings

  • 1 clove garlic
  • ½ tsp salt
  • ½ tsp turmeric

The liquids

  • 1 15 oz can light coconut milk
  • cups water

Instructions

  1. Rinse the lentils in a medium pot until the water runs clear and drain well.
  2. Mince the garlic and add it to the pot with salt, turmeric, coconut milk, and water.
  3. Stir gently to combine all ingredients.
  4. Bring to a boil over medium-high heat, then reduce to a gentle boil without the lid for about 20 minutes.
  5. Once most of the liquid is absorbed, turn off the heat and let sit for 5 minutes.
  6. Taste and adjust salt if necessary.
