Coconut Curried Golden Lentils

Ingredients

The lentils

  • 4 cups water
  • 1 ½ cups golden (yellow) lentils

The coconut curry sauce

  • 1 Tbsp coconut oil
  • 1 small shallot (diced, optional)
  • 4 cloves garlic (minced)
  • 2-3 Tbsp fresh minced ginger
  • ¾ tsp sea salt
  • 1 heaping Tbsp curry powder
  • 1 tsp ground turmeric
  • tsp cayenne pepper
  • 1 ¼ – 1 ½ cups light coconut milk
  • 1-2 Tbsp coconut sugar or maple syrup
  • 2 Tbsp fresh lemon juice

Instructions

  1. Bring water to a boil in a large pot and add lentils, then boil for a few minutes before reducing heat to simmer until tender.
  2. In a skillet, heat coconut oil and sauté shallot, garlic, and ginger for a few minutes.
  3. Add salt, curry powder, turmeric, and cayenne to the skillet and cook for another minute.
  4. Stir in coconut milk and coconut sugar, then let it simmer to combine flavors.
  5. Add the drained lentils to the sauce, adjust seasoning to taste, and stir in lemon juice before serving.
