Coconut Curried Golden Lentils

Instructions
- Bring water to a boil in a large pot and add lentils, then boil for a few minutes before reducing heat to simmer until tender.
- In a skillet, heat coconut oil and sauté shallot, garlic, and ginger for a few minutes.
- Add salt, curry powder, turmeric, and cayenne to the skillet and cook for another minute.
- Stir in coconut milk and coconut sugar, then let it simmer to combine flavors.
- Add the drained lentils to the sauce, adjust seasoning to taste, and stir in lemon juice before serving.
