Ingredients

The Gnocchi

  • 16 ounce mini gnocchi

The Cheese Sauce

  • 4 tablespoons truffle butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 ½ cups Wisconsin swiss cheese, grated
  • 1 cup Wisconsin white cheddar cheese, grated
  • ½ cup Wisconsin parmesan cheese, grated
  • 1 teaspoon kosher salt
  • ½ teaspoon ground white pepper

The Topping

  • ¼ cup dry bread crumbs
  • 1 peeled garlic clove
  • 1 tablespoon fresh Italian parsley
  • 2 tablespoons parmesan cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the gnocchi according to package directions until al dente, then drain and set aside.
  3. In a large saucepan, melt 3 tablespoons of truffle butter over medium heat, then whisk in the flour and cook until light brown.
  4. Add the milk while whisking and cook until the sauce thickens.
  5. In a food processor, combine the remaining truffle butter, bread crumbs, 2 tablespoons of parmesan cheese, garlic, and parsley; process until minced.
  6. Remove the sauce from heat and stir in the swiss, white cheddar, and remaining parmesan until melted.
  7. Add the drained gnocchi to the sauce and mix well.
  8. Pour the mixture into a baking dish, top with the bread crumb mixture and additional parmesan if desired.
  9. Bake for 10-15 minutes until the top is lightly browned and bubbly.
  10. Serve immediately.
