Truffled Gnocchi Macaroni and Cheese

The Topping

dry bread crumbs

Instructions
- Preheat the oven to 375°F.
- Cook the gnocchi according to package directions until al dente, then drain and set aside.
- In a large saucepan, melt 3 tablespoons of truffle butter over medium heat, then whisk in the flour and cook until light brown.
- Add the milk while whisking and cook until the sauce thickens.
- In a food processor, combine the remaining truffle butter, bread crumbs, 2 tablespoons of parmesan cheese, garlic, and parsley; process until minced.
- Remove the sauce from heat and stir in the swiss, white cheddar, and remaining parmesan until melted.
- Add the drained gnocchi to the sauce and mix well.
- Pour the mixture into a baking dish, top with the bread crumb mixture and additional parmesan if desired.
- Bake for 10-15 minutes until the top is lightly browned and bubbly.
- Serve immediately.
