Instructions
- Boil a large pot of water and cook the gnocchi according to package directions, reserving ½ cup of pasta water.
- In a medium frying pan, melt butter over medium heat, then add onion, garlic, salt, and pepper, cooking until the onion is softened.
- Add the chopped mushrooms and cook until they are soft and tender.
- Deglaze the pan with white wine, stirring until it almost evaporates.
- Stir in cream and fresh thyme, then simmer for a few minutes.
- Add reserved pasta water, truffle sauce, and parmesan cheese, stirring to combine and adjusting seasoning as needed.
- Serve topped with additional thyme, parmesan, and ground pepper.
