Mushroom Gnocchi

Ingredients

The gnocchi

  • 500 g gnocchi

The sauce

  • 4 tbsp unsalted butter
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp pepper
  • 200 g oyster mushrooms, chopped
  • ¼ cup white wine
  • ½ cup half and half cream
  • tsp truffle sauce
  • 1 tbsp fresh thyme, minced
  • ½ cup pasta water
  • ½ cup shredded parmesan cheese
  • to taste fresh thyme, ground pepper, and parmesan cheese for garnish

Instructions

  1. Boil a large pot of water and cook the gnocchi according to package directions, reserving ½ cup of pasta water.
  2. In a medium frying pan, melt butter over medium heat, then add onion, garlic, salt, and pepper, cooking until the onion is softened.
  3. Add the chopped mushrooms and cook until they are soft and tender.
  4. Deglaze the pan with white wine, stirring until it almost evaporates.
  5. Stir in cream and fresh thyme, then simmer for a few minutes.
  6. Add reserved pasta water, truffle sauce, and parmesan cheese, stirring to combine and adjusting seasoning as needed.
  7. Serve topped with additional thyme, parmesan, and ground pepper.
