Golden, Crispy Gnocchi

Ingredients

The Gnocchi and Beans

  • 3 cups fresh shell beans (fava, cranberry, butter beans)
  • 1 pound fresh gnocchi
  • ½ pound chanterelle mushrooms (optional)
  • a few sprigs fresh thyme
  • 3 medium shallots
  • a big handful small cherry tomatoes

The Cooking Fats and Garnishes

  • to taste clarified butter or extra virgin olive oil
  • splash of cream (optional)
  • to taste freshly grated parmesan (optional)

Instructions

  1. Cook each type of shell bean in separate pots of boiling water until tender, then drain and salt to taste.
  2. In a large skillet, heat clarified butter or olive oil over medium-high heat and add the gnocchi in a single layer.
  3. Cook the gnocchi until golden brown on the bottoms, then flip and cook until golden all over. Transfer to a platter.
  4. In the same skillet, sauté the mushrooms, shallots, and thyme with salt and pepper until the mushrooms are colored.
  5. Add the cooked shell beans and cherry tomatoes to the skillet, cooking for a few seconds more.
  6. If desired, stir in a splash of cream and pour the mixture over the gnocchi. Sprinkle with parmesan before serving.
