Golden, Crispy Gnocchi

The Gnocchi and Beans

fresh shell beans (fava, cranberry, butter beans)

fresh gnocchi

chanterelle mushrooms (optional)

sprigs
fresh thyme

shallots

small cherry tomatoes

clarified butter or extra virgin olive oil

freshly grated parmesan (optional)
Instructions
- Cook each type of shell bean in separate pots of boiling water until tender, then drain and salt to taste.
- In a large skillet, heat clarified butter or olive oil over medium-high heat and add the gnocchi in a single layer.
- Cook the gnocchi until golden brown on the bottoms, then flip and cook until golden all over. Transfer to a platter.
- In the same skillet, sauté the mushrooms, shallots, and thyme with salt and pepper until the mushrooms are colored.
- Add the cooked shell beans and cherry tomatoes to the skillet, cooking for a few seconds more.
- If desired, stir in a splash of cream and pour the mixture over the gnocchi. Sprinkle with parmesan before serving.
