Mint Chocolate Gluten-free Biscotti

Ingredients

Wet Ingredients

  • ¼ cup applesauce with no added sugar
  • ⅛ – ¼ tsp vanilla liquid stevia
  • 1 tbsp white chia seed meal
  • ¼ tsp mint extract

Dry Ingredients

  • cups almond meal
  • ¼ cup cocoa powder
  • 2 tbsp arrowroot flour
  • 2 tbsp coconut sugar
  • ½ tsp baking soda

Instructions

  1. Combine wet ingredients in a small bowl and mix with an electric mixer.
  2. In a separate bowl, mix dry ingredients together.
  3. Combine the wet and dry ingredients using an electric mixer until the batter is sticky.
  4. Scoop the dough onto parchment paper, flour the top, and shape it into a log about 8 by 3 inches.
  5. Bake at 300°F for about 25 minutes.
  6. Let the log cool completely for about an hour.
  7. Cut the log into diagonal slices with a serrated knife.
  8. Place the slices on parchment paper and bake at 250°F for about 15 minutes on each cut side, or until desired brownness.
  9. Let cool and store on a plate covered with a clean dry kitchen towel.
