Mint Chocolate Gluten-free Biscotti

Dry Ingredients

Instructions
- Combine wet ingredients in a small bowl and mix with an electric mixer.
- In a separate bowl, mix dry ingredients together.
- Combine the wet and dry ingredients using an electric mixer until the batter is sticky.
- Scoop the dough onto parchment paper, flour the top, and shape it into a log about 8 by 3 inches.
- Bake at 300°F for about 25 minutes.
- Let the log cool completely for about an hour.
- Cut the log into diagonal slices with a serrated knife.
- Place the slices on parchment paper and bake at 250°F for about 15 minutes on each cut side, or until desired brownness.
- Let cool and store on a plate covered with a clean dry kitchen towel.
