Almond & Nutmeg Gluten-Free Biscotti

Ingredients

Wet Ingredients

  • ¼ cup applesauce with no added sugar
  • ⅛ - ¼ tsp vanilla liquid stevia
  • 1 tbsp white chia seed meal

Dry Ingredients

  • 1 ¾ cups almond meal
  • 2 tbsp arrowroot flour
  • 2 tbsp coconut sugar
  • ½ tsp baking soda
  • ½ tsp ground nutmeg
  • ¼ tsp almond extract

Instructions

  1. Preheat the oven to 300°F.
  2. In a small bowl, mix the wet ingredients with an electric mixer.
  3. In a separate bowl, combine the dry ingredients.
  4. Add the nutmeg to the dry ingredients and whisk.
  5. Combine the wet and dry ingredients until sticky.
  6. Scoop the dough onto parchment paper and shape it into a log.
  7. Bake for about 25 minutes until slightly golden.
  8. Let cool completely for about an hour.
  9. Slice the log diagonally with a serrated knife.
  10. Place the slices cut side down on parchment paper.
  11. Bake at 250°F for about 15 minutes on each side until desired brownness.
  12. Let cool and store covered with a kitchen towel.
