Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- In a large bowl, combine the dry ingredients: almond flour, coconut sugar, baking powder, and salt.
- Add the wet ingredients: egg, coconut oil, and almond extract, and mix until a thick dough forms.
- Transfer the dough to the baking sheet and shape it into a log about 8-9 inches long and 4 inches wide.
- Bake for 20 minutes or until the edges are lightly golden.
- Let the loaf cool completely, preferably in the fridge or freezer for 1 to 2 hours.
- Slice the cooled loaf into 1/2-inch pieces, making about 20 to 22 slices.
- Preheat the oven to 250ºF for the second bake.
- Arrange the slices on the baking sheet and bake for 30 minutes, then flip and bake for another 30 minutes.
- Turn off the oven and let the biscotti cool inside to ensure they are crispy.
