Almond Apricot Biscotti

Ingredients

The dough

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup sugar
  • 4 Tbsp butter, room temperature
  • 2 large eggs
  • ½ tsp vanilla extract
  • 1 tsp almond extract
  • ¼ tsp nutmeg

Add-ins

  • cup sliced almonds
  • cup dried apricots (about 8 pieces)

Instructions

  1. Preheat the oven to 350ºF.
  2. Mix flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, beat sugar, butter, eggs, vanilla extract, almond extract, and nutmeg until creamy.
  4. Combine the dry ingredients with the wet ingredients to form a soft dough.
  5. Chop the apricots and add them along with the sliced almonds to the dough, mixing well.
  6. Divide the dough into two logs, shape them, and place them on a lined baking sheet.
  7. Press some almonds into the top of the logs for decoration.
  8. Bake for 35 minutes until golden and cracked on top.
  9. Cool for 5 minutes, then slice the logs into ¾-inch wide pieces.
  10. Return the slices to the baking sheet, cut sides up, and bake for an additional 10 minutes, flipping halfway through.
  11. Allow to cool completely before storing.
