Cherry Almond Biscotti

Instructions
- Preheat the oven to 350°F.
- In a mixer or large bowl, beat together sugar, butter, almond extract, vanilla extract, and eggs until combined.
- Add flour, baking powder, and baking soda, and mix well.
- Stir in almonds and cherries, then turn the dough out onto a floured surface and knead gently until it holds together.
- Divide the dough in half and shape each half into a rectangle about 10” x 3”.
- Place the rectangles on an ungreased cookie sheet and bake for about 25 minutes until firm.
- Cool on the cookie sheet for 15 minutes, then cut each rectangle into ½-inch slices.
- Place the slices cut side down on the cookie sheet and bake for an additional 15 minutes until crisp.
- Remove from the oven and cool completely on a wire rack.
- Melt the chocolate in a microwave-safe bowl, stirring every 15 to 20 seconds.
- Dip one end of each biscotti in the melted chocolate and set on a rack to dry.
