Cherry Almond Biscotti

Ingredients

The biscotti

  • 1 cup slivered almonds
  • 1 cup granulated sugar
  • ½ cup butter
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 units eggs
  • 3 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup maraschino cherries

The chocolate coating

  • 8 ounces white chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixer or large bowl, beat together sugar, butter, almond extract, vanilla extract, and eggs until combined.
  3. Add flour, baking powder, and baking soda, and mix well.
  4. Stir in almonds and cherries, then turn the dough out onto a floured surface and knead gently until it holds together.
  5. Divide the dough in half and shape each half into a rectangle about 10” x 3”.
  6. Place the rectangles on an ungreased cookie sheet and bake for about 25 minutes until firm.
  7. Cool on the cookie sheet for 15 minutes, then cut each rectangle into ½-inch slices.
  8. Place the slices cut side down on the cookie sheet and bake for an additional 15 minutes until crisp.
  9. Remove from the oven and cool completely on a wire rack.
  10. Melt the chocolate in a microwave-safe bowl, stirring every 15 to 20 seconds.
  11. Dip one end of each biscotti in the melted chocolate and set on a rack to dry.
