Dark Chocolate Almond Biscotti

Ingredients

The biscotti

  • 1 cup sliced almonds, toasted
  • cup sugar
  • 2 large eggs
  • 1 teaspoon almond extract
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • cups all purpose flour

The chocolate coating

  • 10 oz. dark chocolate chips

Instructions

  1. Preheat the oven to 350ºF.
  2. Toast the sliced almonds in a pan for 5-7 minutes until golden, then let them cool.
  3. In a stand mixer, beat the sugar and eggs until thick, then add almond and vanilla extracts.
  4. Sift together the flour, baking powder, and salt in a separate bowl.
  5. Combine the dry ingredients with the egg mixture and fold in the sliced almonds.
  6. Form the dough into a log on a baking sheet and bake for 25 minutes until firm.
  7. Let the log cool for 10 minutes, then reduce the oven temperature to 325ºF.
  8. Cut the log into ¾ inch diagonal slices and bake the slices for 10 minutes on each side until golden brown.
  9. Melt the dark chocolate chips in the microwave for about 2 minutes.
  10. Dunk one side of each biscotti in the melted chocolate and let them harden.
