Dark Chocolate Almond Biscotti

Instructions
- Preheat the oven to 350ºF.
- Toast the sliced almonds in a pan for 5-7 minutes until golden, then let them cool.
- In a stand mixer, beat the sugar and eggs until thick, then add almond and vanilla extracts.
- Sift together the flour, baking powder, and salt in a separate bowl.
- Combine the dry ingredients with the egg mixture and fold in the sliced almonds.
- Form the dough into a log on a baking sheet and bake for 25 minutes until firm.
- Let the log cool for 10 minutes, then reduce the oven temperature to 325ºF.
- Cut the log into ¾ inch diagonal slices and bake the slices for 10 minutes on each side until golden brown.
- Melt the dark chocolate chips in the microwave for about 2 minutes.
- Dunk one side of each biscotti in the melted chocolate and let them harden.
