Dark Chocolate Biscotti

Ingredients

The dough

  • cups whole wheat flour
  • cup dark cocoa powder
  • ¼ cup light brown sugar
  • 1 Tbsp granulated sweetener of choice
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup egg whites
  • 1 tsp vanilla extract
  • ¼ cup + 2 Tbsp warm water

The mix-ins

  • ¼ cup walnuts, chopped
  • ¼ cup raisins
  • ¼ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a sheet tray with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa, sweeteners, baking powder, and salt.
  3. Add the egg whites and vanilla extract, then slowly mix in the warm water until incorporated.
  4. Fold in the walnuts, raisins, and chocolate chips.
  5. Split the dough into two equal pieces and shape each into a long rectangle on the parchment paper.
  6. Bake for 25 minutes until hard but slightly springy.
  7. Cool for 15 minutes, then lower the oven temperature to 300°F.
  8. Slice the cooled logs into ½-inch wide strips.
  9. Place the biscottis back on the parchment paper cut side down and bake for 10 minutes.
  10. Flip the biscottis to bake the other side for another 10 minutes until crispy.
  11. Transfer to a wire rack to cool and optionally dip in melted chocolate.
