Dark Chocolate Biscotti

Instructions
- Preheat the oven to 350°F and line a sheet tray with parchment paper.
- In a large bowl, whisk together the flour, cocoa, sweeteners, baking powder, and salt.
- Add the egg whites and vanilla extract, then slowly mix in the warm water until incorporated.
- Fold in the walnuts, raisins, and chocolate chips.
- Split the dough into two equal pieces and shape each into a long rectangle on the parchment paper.
- Bake for 25 minutes until hard but slightly springy.
- Cool for 15 minutes, then lower the oven temperature to 300°F.
- Slice the cooled logs into ½-inch wide strips.
- Place the biscottis back on the parchment paper cut side down and bake for 10 minutes.
- Flip the biscottis to bake the other side for another 10 minutes until crispy.
- Transfer to a wire rack to cool and optionally dip in melted chocolate.
