Ingredients

The dough

  • 2 and 1/3 cups all-purpose flour
  • 1 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • zest from 1 orange
  • ¼ cup unsalted butter, cold and cubed
  • ¾ cup chopped walnuts
  • 3 large eggs
  • 2 tablespoons fresh orange juice
  • 1 tablespoon canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 large egg (for wash)

The chocolate coating

  • two 4 ounce semi-sweet or bittersweet chocolate bars, coarsely chopped

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare two baking sheets.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, salt, and orange zest.
  3. Cut in the cold butter until the mixture is crumbly, then stir in the walnuts.
  4. In a separate bowl, whisk the eggs, orange juice, oil, and vanilla extract, then combine with the flour mixture.
  5. Knead the dough lightly on a floured surface until soft and slightly sticky.
  6. Divide the dough into two pieces and shape each into an 8x4-inch rectangle on the baking sheets, brushing with egg wash.
  7. Bake the slabs for 25-26 minutes until lightly browned, then cool for 10 minutes.
  8. Slice the slabs into 1-inch thick pieces and return to the oven, baking each side for 8 minutes.
  9. Melt the chocolate and dip each biscotti, then place back on the baking sheets.
  10. Allow the chocolate to set before serving.
