Dark Chocolate Orange Slice & Bake Cookies

semi-sweet chocolate, coarsely chopped

Instructions
- Beat the butter until smooth, then add brown sugar and beat until fluffy.
- Mix in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk together flour, cinnamon, and salt.
- Gradually mix the dry ingredients into the wet ingredients until combined.
- Add orange zest, juice, and walnuts (if using) and mix until incorporated.
- Divide the dough into two and shape into logs, then wrap in plastic wrap and chill for at least 4 hours.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Roll the chilled logs in coarse sugar if desired, then slice into cookies and place on baking sheets.
- Bake for 12-14 minutes until edges are brown, then cool on a rack.
- Melt the chocolate and dip each cooled cookie halfway, then sprinkle with sea salt and zest.
- Refrigerate to set the chocolate before serving.
