Ingredients

The cookie dough

  • ¾ cup unsalted butter, softened to room temperature
  • cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups + 2 all-purpose flour (spooned & leveled)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • zest from 1 medium navel orange orange zest
  • 2 tablespoons orange juice from 1 medium navel orange
  • ½ cup chopped walnuts (optional)
  • coarse sugar for rolling (optional) coarse sugar

The chocolate coating

  • 8 ounces semi-sweet chocolate, coarsely chopped
  • sea salt for sprinkling on top sea salt

Instructions

  1. Beat the butter until smooth, then add brown sugar and beat until fluffy.
  2. Mix in the egg and vanilla extract until fully combined.
  3. In a separate bowl, whisk together flour, cinnamon, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until combined.
  5. Add orange zest, juice, and walnuts (if using) and mix until incorporated.
  6. Divide the dough into two and shape into logs, then wrap in plastic wrap and chill for at least 4 hours.
  7. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  8. Roll the chilled logs in coarse sugar if desired, then slice into cookies and place on baking sheets.
  9. Bake for 12-14 minutes until edges are brown, then cool on a rack.
  10. Melt the chocolate and dip each cooled cookie halfway, then sprinkle with sea salt and zest.
  11. Refrigerate to set the chocolate before serving.
