Dark Chocolate Orange Shortbread

Instructions
- Preheat the oven to 300 degrees and grease two 9-inch cake pans.
- In a bowl, combine sugar and orange zest, then rub the zest into the sugar.
- In a mixer, cream together the butter, sugar/orange mixture, salt, and vanilla.
- Chop the chocolate into small pieces.
- Add the flour and chocolate to the butter mixture and mix until well combined.
- Divide the dough in half and press into the prepared cake pans evenly, smoothing the surface and pricking with a fork.
- Bake for 40 minutes until golden brown on the edges, then loosen the edges with a knife.
- Let cool for five minutes before transferring to a clean surface in one piece.
- Cut into wedges while still warm and transfer to a cooling rack.
