Dark Chocolate Orange Shortbread

Ingredients

  • 2 sticks unsalted butter
  • 1 tsp salt
  • ¾ cup sugar
  • 2 oranges zest (about 3 tablespoons)
  • 1 tsp vanilla
  • 2 ⅓ cups flour
  • 1 cup dark chocolate (chopped into tiny pieces)

Instructions

  1. Preheat the oven to 300 degrees and grease two 9-inch cake pans.
  2. In a bowl, combine sugar and orange zest, then rub the zest into the sugar.
  3. In a mixer, cream together the butter, sugar/orange mixture, salt, and vanilla.
  4. Chop the chocolate into small pieces.
  5. Add the flour and chocolate to the butter mixture and mix until well combined.
  6. Divide the dough in half and press into the prepared cake pans evenly, smoothing the surface and pricking with a fork.
  7. Bake for 40 minutes until golden brown on the edges, then loosen the edges with a knife.
  8. Let cool for five minutes before transferring to a clean surface in one piece.
  9. Cut into wedges while still warm and transfer to a cooling rack.
