Ingredients

The cake

  • cups all-purpose flour
  • 1 tsp kosher salt
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ cup mild-flavored molasses
  • ½ cup dark brown sugar
  • ½ cup unsalted butter
  • 1 Tbsp finely grated ginger
  • 1 Tbsp finely grated orange zest
  • 1 tsp ground cinnamon
  • ¼ tsp freshly ground pepper
  • 1 large egg

Ganache and Assembly

  • 3½–4 oz 70% dark chocolate
  • ½ cup heavy cream
  • ¼ tsp kosher salt

Instructions

  1. Preheat the oven to 350°F and prepare an 8-inch cake pan with parchment and oil.
  2. Whisk together the dry ingredients in a bowl, and mix the molasses with water.
  3. Cream the butter and sugars with the spices, then add the egg and mix well.
  4. Combine the dry ingredients with the wet ingredients in alternating additions until smooth.
  5. Pour the batter into the prepared pan and bake for 40-45 minutes until springy.
  6. Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
  7. Prepare the ganache by heating cream and salt, then pouring it over the chocolate.
  8. Let the ganache cool until pourable, then pour it over the cooled cake.
  9. Allow the ganache to set before serving.
