Ingredients

The loaf

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • teaspoons ground ginger
  • teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • teaspoon fresh ground pepper
  • cup unsulphured or dark molasses
  • ¾ cup hot water
  • ½ cup unsalted butter
  • cup packed light or dark brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract

The orange icing

  • 1 cup confectioners’ sugar
  • 2–3 tablespoons orange juice

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a 9x5-inch loaf pan.
  2. In a bowl, whisk together the flour, baking soda, spices, salt, and pepper.
  3. In another bowl, mix the molasses and hot water.
  4. In a large bowl, cream the butter and brown sugar, then add the egg and vanilla.
  5. Combine the dry ingredients with the wet ingredients in three additions, alternating with the molasses mixture.
  6. Pour the batter into the prepared pan and bake for 50-60 minutes, checking for doneness.
  7. Allow the loaf to cool completely before drizzling with orange icing.
