Ingredients

The cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • teaspoons ground ginger
  • teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¾ cup unsulphured or dark molasses
  • ¾ cup hot water
  • ½ cup unsalted butter
  • cup packed light or dark brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Spiced Cream Cheese Frosting (optional)

  • 8 ounces full-fat brick cream cheese
  • 2 tablespoons unsalted butter
  • cups confectioners’ sugar
  • 1 tablespoon milk
  • 1 teaspoon pure vanilla extract
  • small pinch ground cinnamon
  • small pinch ground ginger
  • small pinch ground cloves

Instructions

  1. Preheat oven to 350°F (177°C) and grease the chosen cake pan.
  2. Whisk together the flour, baking soda, spices, and salt in a bowl.
  3. In another bowl, mix the molasses with hot water.
  4. In a large bowl, cream the butter and brown sugar until smooth, then add the egg and vanilla.
  5. Gradually mix in the dry ingredients and the molasses mixture, alternating between the two.
  6. Pour the batter into the prepared pan and bake for about 35 minutes.
  7. Allow the cake to cool completely in the pan on a wire rack.
  8. For the frosting, beat the cream cheese and butter until creamy, then add the sugar, vanilla, milk, and spices.
  9. Spread the frosting on the cooled cake and serve.
