Ingredients

The cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • ¼ teaspoon freshly grated nutmeg
  • ½ teaspoon kosher salt
  • ½ cup brown sugar
  • cup white granulated sugar
  • Zest from 1 orange
  • cup neutral oil
  • 1 large egg
  • ½ cup unsulphered molasses
  • ¾ cup hot water

The frosting

  • 6 tablespoons unsalted butter
  • 5 ounces cream cheese
  • cups powdered sugar
  • ½ teaspoon pure vanilla extract
  • Pinch kosher salt
  • 2 teaspoons heavy cream
  • Red and Green Coloring Gel (optional)

Instructions

  1. Preheat the oven to 350°F and grease an 8x8-inch baking pan.
  2. Whisk together the dry ingredients in a medium bowl.
  3. In another bowl, mix the brown sugar, white sugar, and orange zest to release the oils.
  4. Add the neutral oil, egg, and molasses to the sugar mixture and mix until combined.
  5. Gently mix in the hot water.
  6. Fold in the dry ingredients until just combined.
  7. Pour the batter into the prepared baking pan and bake for about 35 minutes.
  8. Allow the cake to cool in the pan for 10 minutes before inverting onto a cooling rack.
  9. To make the frosting, brown the butter in a saucepan and let it cool.
  10. Beat the browned butter with cream cheese until smooth, then add powdered sugar, vanilla, salt, and heavy cream.
  11. Spread the frosting over the cooled cake.
