Healthy Gingerbread Cake with Cream Cheese Frosting

Ingredients

The cake

  • 2 pcs eggs
  • ½ cup coconut sugar
  • ½ cup coconut oil
  • ¾ cup molasses
  • 1 cup very warm water
  • cups white whole wheat flour
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • 3 tsp ground ginger
  • 1 tsp cloves
  • ½ tsp salt

The frosting

  • 1 8 oz block cream cheese, softened
  • ¼ cup butter, softened
  • 1 cup powdered sugar
  • tsp salt
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 pan.
  2. In a large bowl, whisk together the eggs and coconut sugar. Add coconut oil and molasses, stirring until well combined.
  3. Whisk in the warm water.
  4. In another bowl, mix the flour, baking soda, cinnamon, ginger, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until completely combined.
  6. Pour the mixture into the greased cake pan and bake for 20-25 minutes or until a toothpick comes out clean. Let the cake cool completely.
  7. While the cake is cooling, prepare the frosting by blending the frosting ingredients until smooth. Chill if warm.
  8. Frost the cake once it is completely cooled.
