Ingredients

Gingerbread Loaf

  • 3 pieces eggs
  • ¼ cup oil (melted coconut)
  • ½ cup molasses
  • ¼ cup maple syrup
  • splash vanilla
  • 2 cups almond flour
  • ¼ cup arrowroot powder
  • 1 tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp salt
  • 2 tsp ground ginger
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • ¼ tsp cloves

Frosting

  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • ¼ cup butter (softened)
  • pinch salt

Instructions

  1. Preheat the oven to 350°F and grease a bread pan.
  2. Whisk together all of the wet ingredients in a medium bowl.
  3. In a larger bowl, mix all of the dry ingredients together.
  4. Combine the wet ingredients with the dry ingredients and stir until mixed.
  5. Pour the mixture into the greased bread pan and bake for 35-40 minutes, or until a toothpick comes out clean.
  6. While the bread is baking, prepare the frosting by blending all frosting ingredients together using a hand mixer.
  7. Allow the gingerbread loaf to cool completely before frosting it.
  8. Store the frosted loaf in the fridge.
