Dark Chocolate Biscotti

Instructions
- Preheat the oven to 350°F and line a sheet tray with parchment paper.
- In a large bowl, whisk together the flour, cocoa, sweeteners, baking powder, and salt.
- Add the egg whites and vanilla extract to the dry ingredients, then slowly add the warm water while stirring until incorporated.
- Fold in the walnuts, raisins, and chocolate chips.
- Divide the dough into two equal pieces and shape each into a long rectangle, about 2 inches wide and 7 inches long on the parchment paper.
- Bake for 25 minutes until hard to the touch but slightly springy.
- Cool for about 15 minutes and lower the oven temperature to 300°F.
- Slice the cooled logs into ½ inch wide strips.
- Place the biscottis back on the parchment paper with one cut side down and bake for an additional 10 minutes.
- Flip the biscottis to bake the other cut side for another 10 minutes until crispy.
- Transfer to a wire rack to cool and optionally dip in melted chocolate.
