Dark Chocolate Biscotti

Ingredients

The biscotti dough

  • 1 ½ cups whole wheat flour
  • cup dark cocoa powder
  • ¼ cup light brown sugar
  • 1 Tbsp granulated sweetener of choice
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup egg whites
  • 1 tsp vanilla extract
  • ¼ cup + 2 Tbsp warm water

Mix-ins

  • ¼ cup walnuts, chopped
  • ¼ cup raisins
  • ¼ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a sheet tray with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa, sweeteners, baking powder, and salt.
  3. Add the egg whites and vanilla extract to the dry ingredients, then slowly add the warm water while stirring until incorporated.
  4. Fold in the walnuts, raisins, and chocolate chips.
  5. Divide the dough into two equal pieces and shape each into a long rectangle, about 2 inches wide and 7 inches long on the parchment paper.
  6. Bake for 25 minutes until hard to the touch but slightly springy.
  7. Cool for about 15 minutes and lower the oven temperature to 300°F.
  8. Slice the cooled logs into ½ inch wide strips.
  9. Place the biscottis back on the parchment paper with one cut side down and bake for an additional 10 minutes.
  10. Flip the biscottis to bake the other cut side for another 10 minutes until crispy.
  11. Transfer to a wire rack to cool and optionally dip in melted chocolate.
