Vanilla-Almond Biscotti

Ingredients

The dough

  • ½ cup unsalted butter
  • cups sugar
  • ¼ cup light brown sugar
  • 2 units eggs
  • teaspoons vanilla
  • 3 cups all-purpose flour
  • teaspoons baking powder
  • 1 teaspoon kosher salt
  • ½ cup sliced almonds

Optional add-ins

  • ¼ cup chopped pistachios
  • ¼ cup dried cranberries or cherries
  • 6 oz dark chocolate wafers
  • 6 oz white chocolate wafers

Instructions

  1. Cream the butter with the sugars in a mixer until well blended.
  2. Add the eggs one at a time, mixing after each addition, then add the vanilla.
  3. In a separate bowl, whisk together the flour, baking powder, and salt, then stir in the sliced almonds.
  4. Combine the dry ingredients with the wet mixture on low speed until just combined.
  5. Divide the dough into two equal portions and shape each into a long rectangle on a lined baking sheet.
  6. Chill the logs for an hour if possible.
  7. Preheat the oven to 350°F and bake the logs for 30-35 minutes until golden brown.
  8. Cool the logs for 5-10 minutes, then slice them crosswise and lay the slices on their sides on the baking sheet.
  9. Return the pan to the oven for another 10 minutes, then cool on a wire rack.
