Vanilla-Almond Biscotti

Instructions
- Cream the butter with the sugars in a mixer until well blended.
- Add the eggs one at a time, mixing after each addition, then add the vanilla.
- In a separate bowl, whisk together the flour, baking powder, and salt, then stir in the sliced almonds.
- Combine the dry ingredients with the wet mixture on low speed until just combined.
- Divide the dough into two equal portions and shape each into a long rectangle on a lined baking sheet.
- Chill the logs for an hour if possible.
- Preheat the oven to 350°F and bake the logs for 30-35 minutes until golden brown.
- Cool the logs for 5-10 minutes, then slice them crosswise and lay the slices on their sides on the baking sheet.
- Return the pan to the oven for another 10 minutes, then cool on a wire rack.
