Saag Paneer

Ingredients

  • 1 ½ pounds fresh (baby) spinach
  • 2 tablespoons ghee, clarified butter, or unsalted butter
  • 8 - 12 oz paneer cheese
  • 2 medium onions, finely chopped
  • scant ½ teaspoon fine grain sea salt
  • 3 medium garlic cloves, finely chopped
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon spice mixture
  • ¼ teaspoon turmeric
  • 1 cup buttermilk
  • splash none cream or dollop of plain yogurt (optional)
  • fresh lemon none to finish
  • toasted sesame seeds none to sprinkle

Instructions

  1. Chop the spinach and set aside in a large bowl.
  2. Cook the paneer in one tablespoon of butter over medium heat until golden brown, about 7 minutes, then set aside.
  3. In a large soup pot, heat the other tablespoon of butter, add onions and salt, and sauté until softened.
  4. Add garlic, ginger, spice mixture, and turmeric to the pot and cook until fragrant.
  5. Increase heat to medium-high and add the spinach, cooking until wilted.
  6. Stir in buttermilk and cream, adjusting consistency with more buttermilk if needed, and season to taste.
  7. Add a squeeze of lemon juice, stir in the paneer, and sprinkle with sesame seeds before serving.
