Saag Paneer

Instructions
- Chop the spinach and set aside in a large bowl.
- Cook the paneer in one tablespoon of butter over medium heat until golden brown, about 7 minutes, then set aside.
- In a large soup pot, heat the other tablespoon of butter, add onions and salt, and sauté until softened.
- Add garlic, ginger, spice mixture, and turmeric to the pot and cook until fragrant.
- Increase heat to medium-high and add the spinach, cooking until wilted.
- Stir in buttermilk and cream, adjusting consistency with more buttermilk if needed, and season to taste.
- Add a squeeze of lemon juice, stir in the paneer, and sprinkle with sesame seeds before serving.
