Homemade Healthy Palak Paneer

Instructions
- Heat oil in a skillet and sauté onion and chili pepper until soft.
- Add cumin seeds and let them crackle for a minute.
- Mix in garam masala, ground coriander, bay leaves, ginger, and garlic, and sauté for 2-3 minutes.
- Add fire roasted tomatoes and cook until well mixed, about 5-10 minutes.
- Thaw spinach in the microwave, press out excess liquid, and add to the skillet with cilantro.
- Sauté spinach for 3-5 minutes and then remove bay leaves.
- Transfer the mixture to a blender and pulse to desired consistency, then return to skillet.
- Stir in yogurt and water, then add salt and paneer, cover, and simmer for 10 minutes.
- Serve with basmati rice and naan.
