Instructions
- Beat the egg until frothy, then add brown sugar and beat until fluffy. Stir in honey and molasses.
- Sift together flour, nutmeg, cinnamon, baking soda, ground cloves, and allspice. Slowly add the flour mixture to the egg mixture and mix well. Stir in almonds and raisins. Chill the dough for 2 hours or overnight.
- Preheat the oven to 350°F (175°C) and grease two rimmed baking sheets.
- Roll out the dough to ¼-inch thick on a floured surface and cut into rectangles. Space them evenly on the baking sheets.
- Bake for about 12 minutes until golden brown. Cool on a rack.
- Make the glaze by combining egg white, lemon juice, lemon zest, salt, and powdered sugar. Brush the glaze on the warm cookies.
- Cool completely before serving.
