Instructions
- Preheat the oven to 350°F and grease 8 muffin tin cups with cooking spray.
- In a medium bowl, whisk together the egg whites and eggs.
- Whisk in the skim milk and season with salt and pepper.
- Stir in the green onion, kale, and roasted red peppers.
- Pour the egg mixture evenly into the muffin cups.
- Distribute the feta cheese equally between each muffin cup.
- Bake for 20 minutes, or until the muffins are firm in the center.
- Remove from the oven and run a butter knife around each muffin to loosen.
- Serve warm or store in the fridge for 3-4 days, or freeze for later.
