Ingredients

  • 5 egg whites egg whites
  • 2 large eggs
  • ¼ cup skim milk or almond milk
  • to taste salt
  • to taste pepper
  • 1 tablespoon chopped green onion
  • ¼ cup fresh chopped kale
  • ¼ cup chopped roasted red peppers
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat the oven to 350°F and grease 8 muffin tin cups with cooking spray.
  2. In a medium bowl, whisk together the egg whites and eggs.
  3. Whisk in the skim milk and season with salt and pepper.
  4. Stir in the green onion, kale, and roasted red peppers.
  5. Pour the egg mixture evenly into the muffin cups.
  6. Distribute the feta cheese equally between each muffin cup.
  7. Bake for 20 minutes, or until the muffins are firm in the center.
  8. Remove from the oven and run a butter knife around each muffin to loosen.
  9. Serve warm or store in the fridge for 3-4 days, or freeze for later.
