Ingredients

  • 1 large red bell pepper
  • 3 pieces green onions
  • 1 cup fresh baby spinach
  • ½ cup crumbled feta cheese
  • 11 pieces large eggs
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 350ºF and grease a non-stick muffin pan.
  2. Divide the diced bell pepper, green onion, spinach, and feta evenly among the 12 muffin cups.
  3. In a bowl, whisk together the eggs, salt, and black pepper until uniform.
  4. Pour the egg mixture into the muffin cups, filling them nearly full.
  5. Fill a rimmed baking sheet with about 1½ cups of water and place the muffin tin in the water.
  6. Bake in the preheated oven for 20 to 25 minutes until firm in the center.
  7. Let the muffins cool in the pan for 10 minutes before serving.
