Ingredients

The smoothie base

  • 2 cups raw cashews, soaked 4-8 hours
  • 2 cups water

The fruit

  • 1 cup frozen raspberries
  • 1 cup frozen peaches

The sweeteners and flavorings

  • 2 tablespoons agave nectar or honey
  • 1 tablespoon vanilla extract

Optional ingredients

  • 4 cubes ice

Instructions

  1. Soak cashews in water for 4-8 hours and discard the soaking water.
  2. Blend soaked cashews and water in a Vitamix until creamy.
  3. Add raspberries, peaches, agave nectar (or honey), and vanilla extract to the blender and blend until smooth.
  4. If desired, blend in ice cubes for a colder smoothie.
  5. Serve the smoothie in tall glasses.
