Instructions
- Chop all vegetables and dice the chicken into small cubes.
- Cook the rice noodles according to the package instructions.
- Heat 2 tbsp of avocado oil in a skillet and cook the chicken until no longer pink.
- Remove the chicken and add more avocado oil to the pan, then add the onion, garlic, carrots, peppers, and salt, cooking until softened.
- Make the peanut sauce by whisking together all sauce ingredients.
- Push the vegetables aside, crack in the eggs, and scramble them until cooked.
- Mix the eggs with the vegetables, then add the chicken, noodles, and peanut sauce, stirring to combine.
- Serve topped with cilantro, peanuts, lime, sriracha, and green onion.
