Ingredients

Main Ingredients

  • 2 lbs chicken breast
  • 8 oz rice noodles
  • 4 tbsp avocado oil
  • ½ unit yellow onion
  • 2 cloves garlic
  • 2 large carrots
  • 2 medium red bell peppers
  • ½ tsp salt
  • 3 unit eggs

Peanut Sauce

  • ½ cup natural peanut butter
  • 1 tsp sesame oil
  • ¼ cup fish sauce
  • ¼ cup rice wine vinegar
  • 2 small limes
  • 3 tbsp honey
  • ¼ cup coconut aminos or soy sauce
  • ¼ tsp dried ginger
  • 1 tsp sriracha (optional)

Toppings

  • 1 unit lime
  • 1 unit peanuts
  • 1 unit sriracha
  • 1 unit cilantro
  • 1 unit green onion

Instructions

  1. Chop all vegetables and dice the chicken into small cubes.
  2. Cook the rice noodles according to the package instructions.
  3. Heat 2 tbsp of avocado oil in a skillet and cook the chicken until no longer pink.
  4. Remove the chicken and add more avocado oil to the pan, then add the onion, garlic, carrots, peppers, and salt, cooking until softened.
  5. Make the peanut sauce by whisking together all sauce ingredients.
  6. Push the vegetables aside, crack in the eggs, and scramble them until cooked.
  7. Mix the eggs with the vegetables, then add the chicken, noodles, and peanut sauce, stirring to combine.
  8. Serve topped with cilantro, peanuts, lime, sriracha, and green onion.
