Fire Roasted Tomato Salsa

Ingredients

  • 5 pieces vine tomatoes
  • 2 pieces jalapeños
  • 1 head garlic
  • 5 pieces cambray onions or one large red onion, sliced into rings
  • ½ bunch cilantro
  • 1 tbsp lemon juice
  • ¼ tsp cumin
  • ½ tsp dried oregano
  • to taste sea salt and pepper

Instructions

  1. 1. Heat a charcoal grill to about 400 degrees.
  2. 2. Grill the vegetables until blackened on all sides, about 10 to 15 minutes per side.
  3. 3. Transfer the grilled vegetables to a blender or food processor and pulse for a chunky consistency or blend longer for a purée.
  4. 4. Transfer the mixture to a salsa bowl and add cumin, oregano, chopped cilantro, lemon juice, and season with salt and pepper to taste.
  5. 5. Stir everything together and enjoy.
