Ingredients

  • 1 cup pumpkin puree
  • ¾ cup warm water
  • cup melted butter or oil
  • cup granulated sugar
  • 2 large eggs
  • 1-2 tablespoons finely chopped fresh rosemary
  • 1 tablespoon instant yeast
  • 2 teaspoons salt
  • 5½-6 cups all-purpose flour

Instructions

  1. Mix the pumpkin, water, melted butter or oil, sugar, eggs, rosemary, yeast, and salt in a stand mixer.
  2. Add 2 cups of flour and mix, then gradually add more flour until a soft dough forms.
  3. Knead the dough for 5-6 minutes and let it rise until doubled, about 1-2 hours.
  4. Deflate the dough, divide into pieces, and shape into balls.
  5. Place the rolls on a parchment-lined baking sheet and let rise until doubled, about 1-2 hours.
  6. Preheat the oven to 375°F and bake the rolls for 18-22 minutes until golden.
  7. Butter the tops of the rolls immediately after baking.
