Pumpkin Dinner Rolls

Ingredients

  • teaspoons instant yeast
  • ¼ cup brown sugar
  • ½ cup milk, lukewarm
  • 4 tablespoons butter, softened
  • 2 teaspoons salt
  • 2 teaspoons pumpkin pie spice
  • 2 large eggs
  • ¾ cup pumpkin purée, canned pumpkin
  • 4 cups all-purpose flour

Instructions

  1. Mix all the ingredients in a large bowl and knead until a soft dough forms.
  2. Place the dough in a greased bowl and let it rise for 60 to 75 minutes until puffy.
  3. Deflate the dough and divide it into 24 equal pieces, shaping each into a ball.
  4. Arrange the dough balls in a greased skillet or sheet pan and cover to let rise for 1½ to 2 hours.
  5. Preheat the oven to 350°F (176°C) towards the end of the rising time.
  6. Bake the rolls for about 20 minutes, covering with foil if they brown too quickly.
  7. Remove from the oven and brush with melted butter before serving warm.
