Instructions
- Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
- In a large bowl, combine oats, almond flour, protein powder, cocoa powder, chia seeds, baking soda, and salt.
- In a separate bowl, whisk together almond milk, applesauce, maple syrup, vanilla extract, and peppermint extract.
- Mix the wet ingredients into the dry ingredients and fold in the chocolate chips.
- Spoon the batter into the muffin tin, filling each cup about ¾ full.
- Bake for 20-22 minutes.
