Ingredients

  • 1 ½ cups old-fashioned oats
  • ½ cup almond flour
  • ½ cup chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 tbsp chia seeds
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsweetened vanilla almond milk
  • ¼ cup unsweetened applesauce
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp peppermint extract
  • ¼ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
  2. In a large bowl, combine oats, almond flour, protein powder, cocoa powder, chia seeds, baking soda, and salt.
  3. In a separate bowl, whisk together almond milk, applesauce, maple syrup, vanilla extract, and peppermint extract.
  4. Mix the wet ingredients into the dry ingredients and fold in the chocolate chips.
  5. Spoon the batter into the muffin tin, filling each cup about ¾ full.
  6. Bake for 20-22 minutes.
