  • ⅔ to ¾ cup non-dairy milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup dairy free dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin.
  2. Blend the oats until they reach a flour-like consistency.
  3. In a large bowl, whisk together the ground oats, protein powder, baking powder, baking soda, and salt.
  4. In another bowl, mix the nut butter and maple syrup until creamy.
  5. Whisk together the eggs, non-dairy milk, and vanilla in a measuring cup.
  6. Combine the dry and wet ingredients in batches until a smooth batter forms.
  7. Fold in the chocolate chips and spoon the batter into the muffin pan.
  8. Bake for 16-22 minutes, checking for doneness with a toothpick.
