Ingredients

  • cups gluten-free flour
  • ¼ cup organic brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon fine salt
  • 3 medium ripe bananas
  • 2 large eggs
  • ¼ cup oil
  • 1 teaspoon pure vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with liners and cooking spray.
  2. In one bowl, combine the flour, sugar, baking soda, and salt.
  3. In another bowl, mash the bananas and mix in the eggs, oil, and vanilla.
  4. Combine the banana mixture with the dry ingredients until just moistened.
  5. Fold in the chocolate chips.
  6. Fill each muffin well half full with batter and add extra chocolate chips on top.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Allow to cool for 5-10 minutes before transferring to a wire rack.
