Gluten-Free Banana Muffins with Chocolate Chips

Instructions
- Preheat the oven to 375°F and prepare a muffin tin with liners and cooking spray.
- In one bowl, combine the flour, sugar, baking soda, and salt.
- In another bowl, mash the bananas and mix in the eggs, oil, and vanilla.
- Combine the banana mixture with the dry ingredients until just moistened.
- Fold in the chocolate chips.
- Fill each muffin well half full with batter and add extra chocolate chips on top.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Allow to cool for 5-10 minutes before transferring to a wire rack.
