Ingredients

Dry Ingredients

  • 1 3/4 cup gluten-free flour blend
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp xanthan gum
  • ½ tsp salt
  • ½ tsp cinnamon

Wet Ingredients

  • ½ cup unsalted butter
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 ½ cups mashed overripe bananas

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, whisk together the dry ingredients.
  3. In another bowl, whip the butter and sugars until creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gradually add the dry ingredients and mashed bananas, mixing until combined.
  6. Divide the batter among 12 lined muffin cups.
  7. Bake for 17 to 20 minutes until a toothpick comes out clean.
  8. Cool in the muffin tin for a few minutes before transferring to a wire rack.
