Ingredients

  • 3 pieces very ripe bananas
  • 1 ¾ cups gluten free flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 cup coconut sugar
  • ½ cup melted coconut oil (or avocado oil)
  • 2 large eggs
  • 1 ¾ cups roughly chopped organic strawberries

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, mix together the flour, baking soda, cinnamon, and salt.
  3. In a blender, combine the bananas, coconut sugar, vanilla extract, melted coconut oil (or avocado oil), and eggs, blending until somewhat chunky.
  4. Pour the blended mixture into the bowl with the flour mixture and fold in the strawberries.
  5. Line a muffin tin with liners or grease it well.
  6. Using an ice cream scoop or spoon, fill each muffin cup.
  7. Bake for 25 minutes or until a toothpick comes out clean.
