Ingredients

  • 1 cup Bob's Red Mill 1:1 Gluten Free Flour
  • 1 ¼ cup almond flour
  • ¼ cup coconut sugar
  • 1 ½ teaspoon cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large ripe bananas
  • 2 large eggs
  • ¼ cup non-dairy milk
  • 2 tablespoons maple syrup
  • 1 ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F.
  2. Line a muffin pan with liners or grease the muffin cavities.
  3. In a medium bowl, mix together the gluten-free flour, almond flour, coconut sugar, cinnamon, baking soda, and salt.
  4. In a high-speed blender, add the bananas, eggs, non-dairy milk, maple syrup, and vanilla extract, and blend until smooth.
  5. Pour the liquid mixture into the bowl of dry ingredients and mix carefully.
  6. Divide the batter evenly among the muffin cavities, filling each about ¾ full.
  7. Add a banana slice on top of each muffin and bake for 18-20 minutes.
