Instructions
- Preheat the oven to 350°F and coat a muffin tin with cooking spray.
- Melt the butter in a small bowl, then mix in oats, flour, brown sugar, and cinnamon.
- In a stand mixer, cream together bananas, brown sugar, eggs, oil, and vanilla until fluffy.
- In another bowl, whisk together flour, oats, baking powder, baking soda, and salt.
- Slowly add the dry ingredients to the banana mixture until just combined, then fold in chocolate chips or blueberries if using.
- Spoon the batter into the muffin tin, filling each cup about ⅔ full, and top with the oat mixture.
- Bake for 15-22 minutes until a toothpick comes out clean, then allow to cool.
