Muffins

  • 2 large ripe bananas
  • ½ cup brown sugar
  • 2 large eggs
  • ¼ cup oil
  • 2 teaspoons pure vanilla extract
  • 1 cup flour
  • 1 cup old-fashioned rolled oats
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon coarse salt
  • ½ cup dark chocolate chips or fresh or frozen blueberries (optional)

Instructions

  1. Preheat the oven to 350°F and coat a muffin tin with cooking spray.
  2. Melt the butter in a small bowl, then mix in oats, flour, brown sugar, and cinnamon.
  3. In a stand mixer, cream together bananas, brown sugar, eggs, oil, and vanilla until fluffy.
  4. In another bowl, whisk together flour, oats, baking powder, baking soda, and salt.
  5. Slowly add the dry ingredients to the banana mixture until just combined, then fold in chocolate chips or blueberries if using.
  6. Spoon the batter into the muffin tin, filling each cup about ⅔ full, and top with the oat mixture.
  7. Bake for 15-22 minutes until a toothpick comes out clean, then allow to cool.
